Brown Rice Muffins Recipe

Makes 12 muffins

Per muffin: 125 Calories; 1g Fat (5% calories from fat); 5g Protein; 26g Carbohydrate; 0mg Cholesterol; 121mg Sodium

Ingredients:

  • 1 cup brown rice, cooked, cold
  • 1 cup skim milk, or substitute
  • 4 egg white, beaten-or substitute
  • 2 tbsp honey
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 1/4 cups whole wheat flour
  • 1 tbsp baking powder


  • Instructions:

    1. Combine rice, milk, egg whites, honey and vanilla.
    2. Add dry ingredients and stir just enough to moisten.
    3. Pour into non-stick muffin pans or pans lightly misted with cooking spray.
    4. Bake at 400 deg F for 25-30 minutes.
