Santa Sandwich Cookies Recipe
Makes 24 cookies Ingredients: 1 cup butter or margarine (2 sticks), softened
1 cup granulated sugar
1 tsp vanilla
1 3/4 cups all-purpose flour
1 cup uncooked rolled oats, quick or old-fashioned
1/4 tsp salt (optional)
1 16-oz ready-to-spread vanilla-flavored frosting
Green or red food coloring (optional)
Colored sugars
Holiday sprinkles
Instructions: 1. Beat butter, sugar and vanilla until creamy.
2. In separate bowl, combine flour, oats and salt; mix well.
3. Add to butter mixture; mix well.
4. Divide dough in half.
5. Shape each half into a roll 2 inches in diameter and about 5 inches long.
6. Wrap in plastic wrap; chill for at least 3 hours.
7. Preheat oven to 350 F.
8. Unwrap 1 roll of dough; cut into 1/4-inch slices.
9. Places slices about 1 inch apart on ungreased cookie sheets.
10. Repeat with remaining roll.
11. Bake for 12 to 14 minutes or until edges are light golden brown.
12. Let cool for 1 minute on cookie sheet; remove to wire rack.
13. Let cool completely.
14. Tint frosting with food coloring, if desired.
15. Spread frosting on bottom of 1 cooled cookie; top with second cookie.
16. Roll edge of frosting in decorations.
17. Repeat with remaining cookies.
18. Store tightly covered.
