Oatmeal Waffles/Pancakes Recipe

Serves 5

Per waffle (1/2 cup batter): 122.9 calories, 2.5 g fat (17.6%), 2 mg cholesterol, 511 mg sodium.

Ingredients:

  • 1/2 cup egg beaters 99% egg substitute
  • 2 cups 1/2% lowfat buttermilk
  • 1 cup oatmeal, quick cooking
  • 1 tbsp molasses
  • 1 tbsp canola oil
  • 1 cup whole wheat flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder


Instructions:

1. Combine egg substitute, buttermilk, oatmeal, molasses and oil.
2. Stir in combined dry ingredients.
3. Waffles: Bake according to waffle maker's directions.
4. Pancakes: Drop batter by 1/4 cups onto a hot, greased griddle. Turn when bubbles begin to form on top of pancake. Makes approximately 15 pancakes.
