Oatmeal Raisin Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 cup sifted flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 4 tbsp shortening
  • 1 cup quick-cooking rolled oats
  • 1 egg
  • 1 cup milk
  • 1/2 cup brown sugar
  • 1/2 cup raisins
  • 1/4 cup sugar
  • 1/4 tsp cinnamon


Instructions:

1. Preheat oven to 425 degrees.
2. Sift together flour, baking soda and salt.
3. Cut in shortening until mixture resembles coarse crumbs. Stir in rolled oats.
4. Combine eggs, milk and brown sugar, beating well. Stir into dry ingredients and add raisins.
5. Spoon batter into 12-cup muffin tin.
6. Combine sugar and cinnamon and sprinkle over batter.
7. Bake for 15 to 20 minutes.
