Oatmeal Pancakes (Rice) Recipe

Serves 2

Nutrition per Serving: 229 calories, 14.5 grams protein, 14.8 grams fat, 221 mg cholesterol, 1.1 grams fiber, 408 mg sodium.

Ingredients:

  • 2 eggs
  • 1/2 cup cottage cheese
  • 1 tbsp oil
  • 1 cup plus 2 tbsp uncooked, oatmeal, or half oatmeal and half wheat germ
  • 1/8 tsp salt


Instructions:

1. Place all ingredients in blender or food processor and blend 5-6 seconds.
2. Drop by tablespoons into hot greased frying pan.
3. Turn pancakes when bubbles appear on surface and cook 1 minute more.
4. Serve with ham, fruit preserves, fresh berries or other fruit. Surprisingly, these particular pancakes taste much better with fruit than with syrup.
5. Makes four 4-inch pancakes.
