Oatmeal Pancakes (Mozzer) Recipe

Makes 9 pancakes

Food Exchanges per Serving: 3 pancakes makes for 3 starch/breads exchange, 1 fruit exchange, 1 milk exchange, 1 fat exchange.
Per Serving: 484 calories, 18g protein, 12g fat, 76g carbs.

Ingredients:

  • Dry Ingredients:
  • 1 1/2 cup oatmeal,
  • 1/2 cup whole wheat flour,
  • 2 tsp baking powder,
  • 1 tsp cinnamon,
  • Wet Ingredients:
  • 1 cup low-fat milk,
  • 1 egg,
  • 1 tbsp oil,
  • 1/4 cup raisins,


Instructions:

1. Mix the dry ingredients together in a medium bowl. Beat in wet ingredients.
2. Lightly oil a frying pan and spoon batter on by tablespoon turning when the top bubbles.
3. The pancakes are great for lunch sandwishes too.
4. The oatmeal ones are especially good with peanut butter.
