Granola-Buttermilk Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 egg
  • 1/2 cup packed brown sugar
  • 1/3 cup shortening
  • 1 cup buttermilk
  • 1 1/2 cups granola (any flavor), slightly crushed
  • 1 1/4 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda


Instructions:

1. Preheat oven to 400 F. Grease bottoms of 12 medium muffin cups (2 1/2 x 1 1/4-inch).
2. Beat in brown sugar, shortening and buttermilk thoroughly.
3. Stir in remaining ingredients just until flour is moistened (batter will be lumpy).
4. Fill muffin cups 3/4 full.
5. Bake until light brown, 20 to 25 minutes.
6. Immediately remove from pan; serve warm.
