Garbanzo Oat Flake Cookies Recipe

Makes 24 cookies

Ingredients:

  • 1 1/2 cups oat flakes (rolled oats)
  • 1 cup brown rice flour
  • 1/2 cup garbanzo flour, or Oat or Barley Flour
  • 1/2 cup chopped nuts and/or raisins
  • 1 tsp baking powder
  • 1/2 tsp sea salt (optional)
  • 1/2 cup unrefined vegetable oil
  • 1/4 cup honey or maple syrup, or other syrup
  • 1/2 cup water or juice
  • 1 tsp vanilla


Instructions:

1. Mix dry ingredients together.
2. Mix liquids together.
3. Combine mixtures.
4. Drop by teaspoonful on an oiled cookie sheet.
5. Bake at 350 F for 8 to 12 minutes or until edges are lightly browned.
6. Cool on pan before removing.
