Caramel Oatmeal Chewies Recipe

Makes 32 bars

Ingredients:

  • 1 3/4 cup Quaker oats, uncooked, quick or old-fashioned
  • 1 1/2 cup all-purpose flour
  • 3/4 cup brown sugar, firmly packed
  • 1/2 tsp baking soda
  • 1/4 tsp salt (optional)
  • 3/4 cup margarine or butter, melted
  • 1 cup chopped nuts
  • 6 oz semisweet chocolate pieces
  • 1 cup topping, butterscotch caramel fudge
  • 1/4 cup all-purpose flour


  • Instructions:

    1. Heat oven to 350 F.
    2. Lightly grease 13 x 9-inch baking pan.
    3. Combine oats, 1 1/2 cups flour, brown sugar, baking soda and salt; mix well.
    4. Add margarine; mix until crumbly. Reserve 1 cup for topping; set aside.
    5. Press remaining oat mixture onto bottom of prepared pan.
    6. Bake for 10 to 12 minutes or until light golden brown; cool for 10 minutes.
    7. Top with nuts and chocolate pieces.
    8. Combine caramel topping and 1/4 cup flour, mixing until smooth; drizzle over chocolate pieces to within 1/4-inch of edge.
    9. Sprinkle with reserved oat mixture.
    10. Bake for 18 to 22 minutes or until golden brown.
    11. Cool completely; cut into bars.
    12. Store tightly covered.
