Cape Breton Oatmeal Shortbread Recipe
Makes 36 cookies Ingredients: 1 1/2 cup all-purpose flour
1 tsp baking powder
1 1/4 cup margarine
1 cup brown sugar
1/2 tsp vanilla
1 1/2 cup rolled oats
Instructions: 1. Cream margarine.
2. Gradually add brown sugar and vanilla.
3. Add rolled oats, flour and baking powder.
4. Combine well.
5. Turn dough onto lightly floured surface.
6. Knead lightly.
7. Pat or roll dough in a rectangular shape, not too thin.
8. Cut into slices.
9. Bake in 350 oven, 20-25 minutes.
10. Cool on wire racks.
