Honey-Wheat Pumpkin Muffins Recipe

Makes 18 muffins

Ingredients:

  • 1 cup Libby's Solid Pac pumpkin
  • 1 cup milk
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1 egg slightly beaten
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts


Instructions:

1. Preheat oven to 400 F.
2. Combine pumpkin, milk, butter, honey, and egg, mixing well.
3. Combine flours, sugar, baking powder, salt and nuts then add to pumpkin mix until just moistened.
4. Spoon into greased medium sized muffin pans, filling each cup 1/2 full and bake for 15 minutes.
