Double Bran Citrus Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 1/2 cups all-purpose flour with wheat bran (Five Roses)
  • 1/2 cup oat bran
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 egg, lightly beaten
  • Grated rind of 1/2 orange
  • Grated rind of 1/2 lemon
  • 1/2 cup dates or prunes, chopped
  • 1 tbsp sesame seeds


Instructions:

1. In a large bowl, combine flour, oat bran, sugar, baking powder, baking soda and salt.
2. In a separate bowl, beat buttermilk, oil, egg and citrus rinds.
3. Add to dry ingredients, mixing until just dampened and still lumpy.
4. Lightly stir in dates and spoon into lightly greased muffin cups.
5. Sprinkle with sesame seeds.
6. Bake at 375 F for 20 minutes.
