Bran Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 1/4 cups whole-grain wheat pastry flour
  • 1 1/2 tsp baking soda
  • 1 tsp egg beaters
  • 1 1/2 cups bran
  • 5 oz water, boiling
  • 1 cup soy milk
  • 1/4 cup applesauce
  • 1/4 cup honey
  • 1 tsp vanilla
  • 1/2 cup raisins


Instructions:

1. Combine flour, soda, and egg replacer.
2. In a large bowl, pour boiling water over bran.
3. Mix well.
4. Add nut milk, applesauce, honey, vanilla and raisins.
5. Blend well.
6. Stir dry ingredients quickly into wet ingredients.
7. Spoon batter into nonstick muffin tin.
8. Bake at 425 F for 20 minutes.
