Bran Muffins Recipe

Makes 12 muffins

Ingredients:

  • 4 cup all bran
  • 2 cup 100% bran cereal
  • 1 tsp salt
  • 2 cup boiling water
  • 1 qt buttermilk
  • 1 cup liquid shortening
  • 3 cup white sugar
  • 4 eggs
  • 5 cup flour
  • 5 tsp baking soda


  • Instructions:

    1. Combine all bran, bran cereal, salt, boiling water and buttermilk and let stand until luke-warm.
    2. Cream shortening and sugar and then add eggs.
    3. Stir into cool bran mixture.
    4. Add flour and baking soda into the wet bran mixture. Do not overstir.
    5. Optionally, add grated carrots, nuts, apples, spices, oranges, raisins or dates as desired.
    6. Spoon into muffin tins and bake at 350 F for 20 minutes.
    7. Then check until done.
