Best-Ever Bran Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 2 cup all bran or 100% Bran cereal
  • 1 1/4 cup prune juice (no added sugar)
  • 1 egg or 1/4 cup egg beaters
  • 1/2 cup applesauce (no added sugar)
  • 1/2 cup raisins, chopped dates, or chopped prune


Instructions:

1. Mix cereal, prune juice, applesauce and egg in a bowl; let stand 5 minutes.
2. Add fruit if desired.
3. Mix flour, baking powder, baking soda and cinnamon and add to cereal mixture.
4. Stir just till moistened and spoon into muffin pan sprayed with Pam.
5. Bake 18 to 20 minutes.
