Barley and Mushroom Soup Recipe
Serves 4 to 6 Ingredients: 2 tsp butter or oil
1 medium onion, chopped
3 cups fresh sliced mushrooms
2 cloves garlic, pressed
2 tbsp dry white wine
1/2 tsp dried thyme
1 1/2 cups washed barley
1/2 cup soy flakes (optional)
8 cups broth (use your favorite)
Salt and pepper, to taste
2 tbsp chopped fresh dill or 1 tbsp dried
1 tbsp dry sherry
Instructions: 1. Saute the onion in the fat until translucent.
2. Add mushrooms and garlic, stirring, for 2 minutes.
3. Add the wine and thyme, saute for another 3 minutes.
4. Add barley, stir and saute for another 3 minutes.
5. Add the soy flakes and the broth, bring to a full boil and reduce to simmer, for 40 minutes.
6. Season with salt and pepper, stir in sherry and dill.
