Barley and Mushroom Soup Recipe

Serves 4 to 6


  • 2 tsp butter or oil
  • 1 medium onion, chopped
  • 3 cups fresh sliced mushrooms
  • 2 cloves garlic, pressed
  • 2 tbsp dry white wine
  • 1/2 tsp dried thyme
  • 1 1/2 cups washed barley
  • 1/2 cup soy flakes (optional)
  • 8 cups broth (use your favorite)
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh dill or 1 tbsp dried
  • 1 tbsp dry sherry


1. Saute the onion in the fat until translucent.
2. Add mushrooms and garlic, stirring, for 2 minutes.
3. Add the wine and thyme, saute for another 3 minutes.
4. Add barley, stir and saute for another 3 minutes.
5. Add the soy flakes and the broth, bring to a full boil and reduce to simmer, for 40 minutes.
6. Season with salt and pepper, stir in sherry and dill.
