Raisin Pie Recipe

Serves 6

Ingredients:

  • 2 cups raisins
  • 1 1/4 cups cold water
  • 1/2 cup orange juice
  • 1/2 cup brown sugar
  • 2 tbsp cornstarch
  • 1 tsp cinnamon
  • 1 tsp orange rind
  • 1/8 tsp salt
  • 1/4 cup water
  • 1 tbsp vinegar
  • 2 tbsp butter
  • 1 pie pastry, top and bottom


Instructions:

1. Boil raisin, first amount water, and juice, for 5 minutes in a covered pot.
2. Combine the brown sugar, cornstarch, cinnamon, orange rind, salt (dissolved in second amount of water).
3. Add to cooked raisins.
4. Bring to a boil, stirring.
5. Remove from heat.
6. Add vinegar and butter.
7. Pour into unbaked pie shell.
8. Top with other pastry.
9. Bake in hot oven (425 F) for 25 minutes or until done.
