Raisin Bran Muffins Recipe

Makes 12 muffins

Exchanges: 1 Bread, 1-1/2 Fat, 35 Optional Calories.

Nutritional Analysis per serving: 153 calories, 4 g protein, 7 g fat, 21 g carbohydrates, 89 mg calcium, 171 mg sodium, 23 mg cholesterol. Calories from fat: 39%.

Ingredients:

  • 3 oz cereal, bran flakes with raisin
  • 1 1/2 cup flour, whole wheat
  • 1/4 cup sugar, granulated
  • 1 tbsp baking powder
  • 1 cup milk, skim
  • 6 tbsp margarine, unsalted, melted
  • 1 eggs, beaten


Instructions:

1. Preheat oven to 400F.
2. Combine cereal, flour, sugar and baking powder, using a fork.
3. Combine milk, margarine and egg; add to dry mixture, and use a fork to combine ~ do not overmix or beat.
4. Spray muffins tins with cooking spray, divide batter amoung cups and bake for 15 - 20 minutes, until browned or toothpick comes out clean.
5. Remove to rack and cool.
