Fruit and Nut Muffins Recipe

Makes 36 muffins

Ingredients:

  • 1 cup sugar or less
  • 1 cup applesauce
  • 1/4 cup oil
  • 3 egg whites
  • 3 tbsp skim milk
  • 1 cup whole wheat flour
  • 1 cup unbleached white flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup chopped walnuts
  • 1/2 cup raisins
  • 1/2 cup chopped dates


Instructions:

1. Preheat oven to 350 degrees.
2. In a large bowl combine sugars, applesauce, oil, egg whites and milk. Mix thoroughly.
3. Add flours, baking soda, baking powder and spices.
4. Combine until well mixed.
5. Stir in nuts, raisins and dates.
6. Spoon into lightly oiled or paper lined muffin tins and bake for 20-30 minutes.
