Classic Bran Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 1/2 cups wheat bran
  • 1 cup buttermilk, or 1 cup milk with 1 tablespoon lemon juice
  • 1/3 cup vegetable oil
  • 1 egg
  • 2/3 cup brown sugar
  • 1/2 tsp vanilla
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup raisins, or dates


Instructions:

1. Preheat oven to 375F.
2. Mix together wheat bran and buttermilk; let stand.
3. Combine vegetable oil, egg, sugar and vanilla and add to buttermilk-bran mixture.
4. Sift together flour, baking soda, baking powder and salt.
5. Add to first mixture and stir until just blended.
6. Add raisins or dates and spoon into prepared muffin tins.
7. Bake for 15-20 minutes.
