Cinnamon-Raisin Muffins Recipe

Makes 12 muffins


  • 11 1/4 cup all-purpose flour
  • 1/2 cup regular, quick or instant, Cream of Wheat Cereal
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 cup milk
  • 1 egg, lightly beaten
  • 2 tsp Fleischmann's margarine, melted
  • 11 tsp vanilla extract
  • 1 cup california raisins
  • 2 tsp fruit juice, any flavor


1. In medium bowl, combine flour, cereal, 1/4 cup sugar, baking powder and cinnamon; set aside.
2. In small bowl, combine milk, egg, margarine and vanilla; stir into dry ingredients just until moistened.
3. Stir in raisins.
4. Spoon mixture evenly into 12 greased 2 1/2" muffin-pan cups.
5. Bake at 400'F 18-20 minutes or until toothpick inserted in center comes out clean.
6. Remove from pan; brush tops of muffins with fruit juice and roll in remaining sugar.
7. Serve warm.
