Makes 12 muffins



1. Preheat oven to 325F.
2. Grease muffin tins.
3. Put the pureed persimmons in a small bowl and stir in the baking soda. Set aside.
4. Mix margarine and sugar until creamy.
5. Add eggs and beat well.
6. Add flour, salt and cinnamon; beat until blended.
7. Add vanilla, lemon juice and bourbon.
8. Stir in nuts and currants.
9. Fill each muffin cup 3/4 full.
10. Bake for 45 minutes.
11. Remove from muffin pans and let cool.
12. Serve warm.
