Pear Muffins Recipe

Makes 24 muffins

Ingredients:

  • 3 1/2 cup flour
  • 2/3 cup sugar
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp grated lemon peel
  • 2 eggs
  • 1 1/3 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 cup peeled, finely chopped pears
  • 2 tbsp sugar
  • 1/2 tsp each nutmeg and cinnamon


Instructions:

1. Preheat oven to 400F.
2. Blend in a bowl the flour, sugar, baking powder, soda, spices, salt and lemon peel.
3. In another bowl, moosh together the eggs, buttermilk and oil.
4. Combine contents of the bowls.
5. Fold in the pears.
6. Spoon the batter 2/3 full into greased muffin tins.
7. Mix 2 tbsp sugar with 1/2 tsp each cinnamon and nutmeg.
8. Sprinkle this over the top of the muffins, then bake 20-25 minutes.
