Minted Pears with Honey Walnuts Recipe
Serves 4 Ingredients: 2 tsp low or no fat margarine
2 tbsp honey
1/2 cup walnuts
4 cups water
3 bags mint tea
1/2 cup honey
12 small pears, preferably seckel
Lemon juice
Instructions: 1. To make honey walnuts: Butter a small cookie sheet.
2. Melt butter and honey in a medium skillet over medium heat.
3. Add walnuts.
4. Cook, stirring often for 5 minutes until walnuts start to caramelize.
5. Spread nut mixture on cookie sheets to cool.
6. To make minted pears: Bring water to a boil in a large saucepan.
7. Remove from heat.
8. Add teabags and 1/2 cup honey, stirring to dissolve honey.
9. Cover and steep for 5 minute.
10. Peel pears, leaving stems intact.
11. Rub each with lemon juice to prevent discoloring.
12. Remove tea bags from tea.
13. Bring tea to a simmer.
14. Add pears.
15. Cover and simmer for 10 to 20 minutes until tender.
16. Time depends on the ripeness and size of the pears.
17. Pears may be served hot or cold in poaching syrup. Sprinkle with honey walnuts.
