Peachy Pecan Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 1/2 cup flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk
  • 2 medium peaches, diced, to equal one cup
  • 1/2 cup sugar
  • 1 1/2 tsp cinnamon
  • 1/2 cup butter, melted
  • 1 egg
  • 1/2 cup pecans, chopped
  • 1/4 cup flour
  • 2 tbsp butter, melted
  • 1/2 cup brown sugar
  • 1 1/2 tsp cinnamon


Instructions:

1. Preheat oven to 400F.
2. In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt.
3. Mix butter, milk and egg together and pour into the flour mixture.
4. Fold in peaches.
5. Spoon mixture into greased and floured muffin pans.
6. Combine topping ingredients and sprinkle over batter.
7. Bake for 20 to 25 minutes.
