Peach Chutney (Rice) Recipe

Makes 2 pints


  • 2 large peaches, coarsely chopped (about 2 cups)
  • 1 cup raisins
  • 1 cup packed brown sugar
  • 1/3 cup lemon juice
  • 1 jar (2 to 3 oz) crystallized ginger, finely chopped
  • 1 clove garlic, finely chopped
  • 1/2 tsp salt


1. Mix all ingredients in 2-quart microwavable casserole.
2. Cover tightly and microwave on high for 10 to 12 minutes stirring, after 5 minutes, until peaches are transparent and chutney is syrupy.
3. Refrigerate until chilled.
4. Store in re-refrigerator for up to 2 weeks.
