Mini Peach Muffins Recipe

Makes 16 muffins

Ingredients:

  • 3/4 cup flour
  • 2 tbls sugar
  • 1 tsp baking powder
  • Pinch of salt
  • 1 egg, beaten
  • 1/3 cup milk
  • 2 tbls butter, melted and cooled
  • 1/2 tsp almond or vanilla extract
  • 1 peach, pitted and diced
  • 1/4 cup almonds, chopped


  • Instructions:

    1. In bowl, combine dry ingredients.
    2. In separate bowl, combine egg, milk, butter and extract.
    3. Add liquid ingredients to dry ingredients and stir until just combined.
    4. Gently fold in peach and almonds until just combined.
    5. Spoon into buttered mini-muffin tins and bake at 400F 15 to 20 minutes.
