Tequila-Orange Vinaigrette Recipe

Serves 12

Ingredients:

  • 1 lemon, juiced
  • 2 oranges, juiced
  • 2 tbsp tequila
  • 2 tbsp sugar
  • 1 tsp orange zest
  • 2 tbsp champagne wine vinegar
  • 1/4 cup corn oil
  • 1/4 cup olive oil
  • Salt, to taste


  • Instructions:

    1. Combine lemon juice, orange juice, tequila and sugar in a small saucepan over medium-low heat; cook until reduced to 2 tablespoons.
    2. Transfer to a small bowl and add the orange zest and champagne vinegar.
    3. Combine the oils in a measuring cup.
    4. While shisking the vinegar mixtures, drizzle the oils in a steady stream.
    5. Add salt to taste.
    6. Makes about 3/4-cup.
    7. Good with seafood salads.
