Pancakes with Orange Sauce Recipe

Serves 4

Per Serving: 233 calories, 8 g protein, 47 g carbohydrates, 2 g fat, 1 mg cholesterol, 244 mg sodium, 352 mg potassium.

Ingredients:

  • 3/4 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1 tbsp honey
  • 2 stiffly beaten egg whites
  • 1/2 cup all-purpose flour
  • 3/4 cup skim milk
  • 1 tsp cooking oil


Instructions:

Pancakes:
1. Combine flours, baking powder, and 1/8 teaspoon salt.
2. Combine milk, honey and oil; add to dry ingredients.
3. Stir just till moistened.
4. Fold in egg whites.
5. Spray a cold griddle with Pam.
6. For each pancake, pour about 1/4 cup batter onto hot griddle.
7. Cook till brown, turning when pancakes have bubbly surfaces.
8. Serve with Orange Sauce.

Orange Sauce:
1. Combine 2 tbsp sugar and 1 tbsp cornstarch.
2. Stir in 3/4 c water and 2 tbsp frozen orange juice concentrate.
3. Cook and stir till thickened and bubbly.
4. Cook and stir 2 minutes more.
5. Stir in one 11-oz can mandarin orange sections, drained, and 1 tbsp finely chopped walnuts.
6. Keep warm.
