Orange Yogurt Muffins Recipe

Makes 12 muffins

Ingredients:

  • 2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup currants
  • 1 egg
  • 1 cup low-fat yogurt
  • 1/4 cup margarine or butter,melted
  • 2 tbsp orange rind strips
  • 1/4 cup orange juice


  • Instructions:

    1. In large bowl, stir together flour, sugar, baking powder, baking soda and salt.
    2. Mix in currants.
    3. In separate bowl, beat egg; blend in yogurt, margarine or butter, orange rind and juice.
    4. Stir into flour mixture just until moistened.
    5. Spoon into large greased or paper-lined muffin cups, filling to top.
    6. Bake in 350 oven for 25 minutes or until firm to the touch.
