Orange Waffles Recipe

Serves 3

This batter burns easily; so set your waffle iron on a low setting.


  • 1 tsp active dry yeast
  • 1 cup orange juice, freshly-squeezed, warmed to about 120 F
  • 1/2 cup low fat soy milk, at room temperature
  • 1 tsp oil
  • 1 tsp vanilla extract
  • 1/8 tsp orange oil or 1 tablespoon grated orange rind
  • 1/2 tsp salt
  • 2 1/4 cups whole wheat pastry flour
  • 1 tsp baking powder

Special Equipment: Waffle Iron


1. Dissolve yeast in warm orange juice and let sit for 10 minutes.
2. Add remaining ingredients and stir well for several minutes.
3. Let batter rest, covered, in a warm spot for 30 minutes.
4. Heat waffle iron, pour in the appropriate amount of batter for your specific model, and spread to the edges of the waffle iron.
5. Close and cook until gently browned.
