Orange Macadamia Nut Cookies Recipe
Makes 72 cookies
Recipe can easily be cut in half.
Ingredients: 4 cup flour
2 cup powdered sugar, sifted
1 cup cornstarch
2 cup butter
1 cup macadamia nuts
2 egg yolks
1 tbsp fine shredded orange peel
4 to 6 tbsp orange juice
Sugar
Orange Frosting:
2 cup powdered sugar, sifted
3 tbsp butter, softened
1 tsp fine shredded orange peel
2 to 3 tbsp orange juice
Instructions: 1. In large mixing bowl stir together flour, powdered sugar and cornstarch.
2. Using a pastry blender, cut in butter till mixture resembles coarse crumbs.
3. Stir in nuts.
4. Combine egg yolks, 1 tbls orange peel and 4 tbls orange juice; add to flour mixture, stirring until moistened.
5. If needed, add more orange juice to moisten.
6. On lightly floured surface, knead dough til it forms a ball.
7. Shape dough into 1-1/4" balls.
8. Arrange balls on ungreased baking sheets; flatten by pressing with the bottom of a glass to 1/4" thickness, dipping glass into sugar for each round.
9. Bake at 350 for 12-15 minutes or until edges begin to brown.
10. Remove from baking sheets.
11. Cool on wire rack.
12. Frost with Orange Frosting.
13. If desired, garnish with finely shredded orange peel.
Orange Frosting:
In a bowl, stir together powdered sugar, butter, orange peel and enough orange juice to make an icing of spreading consistency.
