Gluten-Free Orange Muffins or Quick Bread Recipe

Makes 12 muffins

Ingredients:

  • 1 1/2 cups AM millet or rice flour
  • 1/2 cup AM soy flour
  • 1 tbsp non-alum baking powder
  • 1/2 tsp sea salt (optional)
  • 1/4 tsp orange flavor
  • 1 cup water or orange juice
  • 1/4 cup AM unrefined vegetable oil
  • 1/4 cup rice syrup


Instructions:

1. Combine all dry ingredients.
2. Mix all liquids; add to dry ingredients.
3. Pour into well-oiled pan.
4. For muffins, fill cups full, bake at 375 F for 15 to 20 minutes.
5. For bread, bake for 35 to 40 minutes or until done. Makes 1 loaf of bread.
