Butterfly Orange Muffins Recipe

Makes 12 muffins

Ingredients:

  • 2 cup flour, self-rising
  • 2 tbsp sugar
  • 1 egg, beaten
  • 1 cup milk
  • 3 tbsp shortening, melted (or oil)
  • 1 tbsp orange rind, grated
  • 24 mandarin orange sections, drained


Instructions:

1. Combine flour and sugar in a large mixing bowl.
2. Blend together egg, milk, shortening, and orange rind.
3. Add liquid all at once to flour mixture, stirring only until flour is moistened.
4. Fill greased muffin pans 2/3 full.
5. Place 2 orange sections on each muffin in opposite directions to form a butterfly.
6. Bake at 425 degrees for 20 to 25 minutes or until golden brown.
