Nectarine Ginger Chutney Recipe
Makes 6 quarts Ingredients: 3/4 lb fresh ginger, peeled and minced
6 cups granulated sugar
3 cup cider vinegar
6 cloves garlic, peeled and mashed
8 lb nectarines (about 24 medium), pitted and cubed
2 medium onions, chopped
1 1/2 cup lemon juice
1 cup golden raisins
1 cup raisins
Instructions: 1. Cover ginger with water in a saucepan and bring to a boil, turn down heat and simmer until tender, 35 to 40 minutes.
2. In a large non-aluminum pot, mix ginger water, ginger, sugar, vinegar, and garlic.
3. Bring to a boil and add remaining ingredients.
4. Cook until thick, about 1 1/2 hours.
