Minted Peaches and Melons Recipe

Serves 6

Ingredients:

  • 2 (about 4-1/2 lbs) small cantaloupes, peeled, seeded, and cut into 1/2-inch cubes
  • 6 (about 1-1/2 lbs) medium peaches, peeled, pitted and sliced
  • 1/2 cup slivered toasted almonds
  • 1/2 cup orange juice
  • 2 tbsp lemon juice
  • 1/4 cup chopped mint


  • Instructions:

    1. In a large bowl, stir together the cantaloupe, peaches, almonds, orange juice and lemon juice. At this point the fruit can be refrigerated, tightly covered, for up to 8 hours.
    2. Just before serving, toss with the mint.
    3. Serve cold or at room temperature.
