Melons Stuffed with Fruits and Vegetables Recipe

Serves 6

Ingredients:

  • 3 small melons
  • 1/3 cup oil
  • 2 cups carrots, thinly sliced
  • 2 tbsp raisins, seedless
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup green apple, chopped
  • 1 cup green onion, chopped, green part only
  • 1/2 cup lemon rind, grated
  • 3 cups rice, cooked
  • 1 tbsp oil
  • 2 tbsp pine nuts



  • Instructions:

    1. Cut each melon in half and remove and discard the seeds.
    2. Scoop out the fruit and reserve.
    3. Heat 1/2 cup oil in large skillet.
    4. Add the carrots and raisins.
    5. Saute together until the carrots are soft.
    6. Add the salt, pepper, apple, green onion and lemon rind.
    7. Continue cooking until the apples are soft.
    8. Remove from heat and cool.
    9. Preheat oven to 325 F.
    10. Combined the sauteed mixture with cooked rice and stuff the melons.
    11. Chop up 2 cups of the reserved melon and arrange on top of the stuffing.
    12. Place the stuffed melons in a baking dish and bake for 20 minutes.
    13. Heat 1 tbsp of oil in a small pan and brown the pine nuts, being careful not to let them burn.
    14. Sprinkle on top of baked melons and serve.
