Melon Peach Conserve Recipe

Serves 6

Ingredients:

  • 6 cups peaches, diced, peeled
  • 2 cups cantaloupe, diced
  • 6 cups sugar
  • 1/4 cup lemon juice
  • 2 tbsp syrup from preserved ginger
  • 1/4 cup preserved ginger, chopped
  • 1/4 cup chopped pecans


  • Instructions:

    1. In a large kettle, place peaches and cantaloupe.
    2. Simmer for 30 minutes, stirring gently to prevent sticking.
    3. Add sugar, lemon juice and syrup and boil rapidly until mixture thickens; stir to prevent sticking.
    4. Stir in ginger and pecans and pour into hot sterilized jars.
    5. Seal with 2 layers of paraffin.
    6. Cool, cover and store in cool, dry, dark place.
