Honeydew Melon with Rice Wine Vinegar and Cilantro Recipe

Serves 4

Ingredients:

  • 1 honeydew melon
  • 1/3 cup rice wine vinegar
  • 1 small chili pepper
  • 1/4 cup fresh cilantro leaves, torn


  • Instructions:

    1. Seed the melon, peel and cut into fork-sized chunks.
    2. Seed the chili pepper and cut into thin strips.
    3. Place the melon chunks in a bowl.
    4. Sprinkle with vinegar, pepper strips, and cilantro and place in the refrigerator to chill for 20 minutes.
    5. Drain off any juices that have collected, and serve the melon for breakfast or brunch.
