Cantaloupe Soup Recipe
Serves 8 to 10 Ingredients: 4 ripe small cantaloupes, peeled, seeded, and cut into 1-inch chunks
6 oz orange juice concentrate
1 cup honey, amount of honey may be decreased if cantaloupes are very sweet
1/2 tsp cinnamon (more to taste)
1 cup whipping cream
1/2 cup calvados
Mint sprigs (garnish)
Instructions: 1. Puree cantaloupe in blender or processor until smooth.
2. Stir in remaining ingredients except mint and mix well.
3. Chill thoroughly.
4. Serve in chilled stemmed glasses or glass bowls and garnish with mint sprigs.
