Michael's Mango Chutney Recipe
Makes 8 cups Ingredients: 1 1/2 cup vinegar
1 1/2 cup brown sugar
5 cup diced or sliced mango
1 tbsp minced garlic
2 tbsp ground ginger
1 tsp ground coriander
1 tbsp curry
1/4 tsp cayenne pepper
1 tsp salt
Instructions: 1. Place vinegar and sugar in a pot, place over medium heat, bring to a boil and cook until the liquid reduces and thickens.
2. Add all other ingredients, simmer for 5 minutes and remove from the heat.
3. Let the mixture cool to room temperature and pack into jars.
4. The chutney tastes better after about 2 weeks.
5. If you want to keep it longer, you can can it.
