Mango-Apricot Chutney Recipe
Makes 4 1/2 cups Per serving: Calories 51 Trace hit No cholesterol Sodium 73 mg Percent calories from fat 2% Ingredients: 1/2 cup chopped mango
1 cup diced Golden Delicious apple
1 cup diced onion
1 cup diced dried apricots
3/4 cup red wine vinegar
1/2 cup brown sugar
1/4 cup chicken stock
1 tbsp minced ginger
3 cloves garlic, minced
1/2 tsp salt
1/4 tsp cinnamon
Instructions: 1. Combine all ingredients in heavy saucepan and bring to boil.
2. Reduce heat and simmer, uncovered, 1 hour stirring frequently.
3. Remove from heat.
4. Let cool.
5. Refrigerate in airtight container.
6. Serve at room temperature, with pork tenderloin, poultry or ham.
