Anne's Pickled Mango Recipe

Serves 4

Ingredients:

  • 4 cups sugar
  • 2 cups vinegar
  • 3/4 cup Hawaiian salt
  • 6 cups water
  • 1 tsp Chinese 5-spice
  • 5 to 6 green mangoes
  • Red food coloring, if desired


  • Instructions:

    1. Combine above ingredients and bring to boil, cool, peel green mangoes and cut into long slices. Don't add salt or water to them.
    2. Fill sterilized jar with slices.
    3. Pour cool syrup over them.
    4. Add more slices after 30 minutes.
    5. Cover jar.
    6. Leave it out for 2 to 3 days and refrigerate.
