Low-Fat Fruit Muffins with Variations Recipe

Makes 12 muffins

Ingredients:

  • Cranberry Orange Muffins:
  • 1 cup self rising flour
  • 1/2 cup dried cranberries
  • 1/4 cup sugar
  • 1/4 tsp cinnamon
  • 1/2 cup orange juice
  • Blueberry Muffins:
  • 1 cup self rising flour
  • 1/4 cup sugar
  • 1/2 cup frozen blueberries, left, frozen
  • 1/2 cup orange juice
  • Banana Muffins:
  • 1 cup self rising flour
  • 1/4 cup sugar
  • 1 banana, mash
  • 1 jar banana baby food juice


Instructions:

1. Mix dry ingredients and fruit, add juice and stir just until blended.
2. Put in muffin cups and bake at 305 degrees for about 25 min.
