Key Lime Cheese Pie Recipe

Serves 8

Ingredients:

  • 1 14 ounce can sweetened condensed milk
  • 1 8 ounce cream cheese, softened
  • 3/4 cup plus 2 tbsp key lime juice (use lemon juice for Lemon Cheese Pie)
  • 1/2 tsp vanilla
  • 1 9-inch deep-dish graham cracker pie shell, baked
  • 1 pint heavy cream
  • 1/4 cup sugar
  • Lime slices for garnish


  • Instructions:

    1. Put the condensed milk, cream cheese, lime juice and vanilla in a food processor fitted with the steel blade, and process for 5 minutes. (Or beat in a mixer fitted with a wire whip for 15 minutes.)
    2. Spoon the filling into the cooled pie crust, and refrigerate at least 8 hours, until filling is firm.
    3. Whip the cream with the sugar until soft peaks form.
    4. Spread on pie.
    5. Garnish the pie with lime slices.
