Islamorada Key Lime Pie Recipe
Serves 8 Ingredients: 1 can condensed milk
6 eggs, separated
1/2 cup key lime juice
1 tbsp cream of tartar
1 cup sugar
1 10-inch pie crust
Instructions: 1. Whip together condensed milk and separated egg yolks until light and creamy at medium speed, about 8 minutes.
2. Add 1/2 cup lime juice.
3. Let rotate at low speed for about 1 second.
4. Fold a few times with a rubber spatula.
5. Pour into baked pie shell.
6. Let stand.
7. Beat separated egg whites with cream of tartar for a full 5 minutes.
8. Add sugar.
9. Beat another full 5 minutes.
10. Spread on top of pie.
11. Brown in oven at 350 F.
