Pineapple Cream Pie Recipe
Serves 6 Ingredients: 1 cup sifted flour
1/2 tsp salt
1/2 cup salad oil
5 tbsp ice water
4 tbsp butter
1 1/2 can sifted confectioners' sugar
2 eggs
1 cup crushed pineapple, drained
Instructions: 1. Preheat oven to 450 F.
2. Sift the flour and salt into a bowl.
3. Beat the oil and water until thick and creamy; add to the flour.
4. Mix with a fork until a ball of dough is formed.
5. Roll out on a lightly floured surface to fit a 9-inch pie plate.
6. Prick the bottom.
7. Bake for 12 minutes or until golden brown.
8. Cool.
9. Cream the butter, gradually adding the confectioners' sugar.
10. Beat in the eggs until light and fluffy.
11. Fold in the pineapple.
12. Turn into a pie shell and chill until set.
13. Decorated with whipped cream, if desired.
