Party Lemon Meringue Pie Recipe
Serves 6 Ingredients: 1 pk lemon pudding
2 1/4 cup water
2 tbsp lemon juice
1 baked 9" pie shell,cooled
6 tbsp sugar
2/3 cup sugar
3 egg yolks
2 tbsp butter or margarine
3 egg whites
Instructions: 1. Combine pie filling mix, 2/3 cup sugar and 1/4 cup of water in saucepan.
2. Blend in egg yolks and remaining water.
3. Cook and stir over medium heat, until mixture comes to a full bubbling boil.
4. Remove from heat.
5. Blend in lemon juice and butter.
6. Cool 5 minutes, stirring twice.
7. Pour into pie shell.
8. Beat egg whites until foamy throughout.
9. Gradually beat in 6 tablespoons sugar and continue beating until mixture will form shiny peaks.
10. Spread over pie filling.
11. Bake @ 425 degrees for 5 to 10 minutes or until meringue is delicately brown.
12. Cool at least 4 hours before cutting.
