Lemon Poppy Seed Muffins Recipe

Makes 12 to 15 muffins

Ingredients:

  • 2 cups unsifted flour
  • 3/4 cup sugar
  • 1/2 tsp baking soda
  • 1/2 cup butter, softened
  • 1/2 tsp salt
  • 2 eggs
  • 1/4 tsp baking powder
  • 1 cup buttermilk
  • 4 tsp poppy seeds
  • 1 tsp vanilla extract
  • 2 tbsp grated lemon rind


Instructions:

1. Preheat oven to 400F.
2. Combine flour, baking soda, salt, baking powder, poppy seeds and lemon rind.
3. In a large mixer bowl, beat sugar and butter until fluffy; beat in eggs until smooth.
4. Add buttermilk and vanilla; mix well.
5. Stir in flour mixture JUST until moistened.
6. Fill paper cup-lined or greased muffin cups 3/4 full.
7. Bake 20 minutes, or until golden brown. Serve warm.
