Lemon-Anise-Poppy Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp poppy seeds (generous heap)
  • 1 each rind of 1 lemon
  • 1 tsp lemon extract
  • 1 tsp anise extract
  • 1 each powdered egg substitute (reconstituted)
  • 1 6 ounce white wave soy yogurt
  • 1 cup orange juice


  • Instructions:

    1. Combine dry ingredients through poppy seeds.
    2. In separate bowl, mix remaining ingredients.
    3. Make a well in dry ingredients, and combine wet mixture.
    4. Spritz and flour a bundt muffin pan.
    5. Spoon in batter equally.
    6. The dough will be stiff, you may have to level each muffin with moistened fingers.
    7. Bake in pre-heated oven at 350 F, for approximately 22 to 25 minutes.
    8. Cool in pan for 5 minutes, and on rack for another 10.
